Eddy (they/he) joined EPNI in Spring 2026. They grew up between the Georgia/Florida border before moving to Saint Paul in their early teens. Eddy’s relationship with food and farming kicked off during the harvest season at a small CSA in Wisconsin before going on to work at small pedagogical livestock farms in France and Tunisia.

In 2019, Eddy moved to southern Montana, where they finished a Bachelor's in Sustainable Food and Bioenergy Systems, focusing on Agroecology. During that time, they worked closely (and from far away) with a group of smallholder farmers and educators in Dakar, Senegal, seeking to reintroduce traditional foods into early childhood education in an urban setting. They also picked up cooking, working at a variety of high-end farm-to-table restaurants and completing a butcher/animal preservation apprenticeship in Tuscany.

Since early 2025, they have worked in East and Midtown Phillips with Tamales y Bicicletas, the Semilla Center, San Pablo, NACDI, and the East and Midtown Phillips neighborhood associations.
